So you’ve decided that you’re doing Veganuary.
Some people will say you’re mad, others will tell you it can’t be done. Everyone will ask, “so, what will you actually eat?”
What you’re about to discover is that a plant-based diet can be just as rich and varied as any other once you’re armed with the right ingredients.
There are some foods that pop up over and over again in vegan recipes and others that you might not have tried if you weren’t going vegan.
Here’s what we reckon you’ll be eating plenty of over the next month.
Tofu
Sub it in for meat in your dinners or make tofu scramble when you’re craving eggs.
Beans
Super filling and super versatile.
Instant noodles
For lazy days. Often the powdered flavourings that come with them aren’t vegan, so stock up on soy sauce or sriracha too.
Nuts
Munch as a snack or use to add texture and protein to stir-fries and salads.
Tinned tomatoes
You’ll find yourself using lots of these in your curries, casseroles, stews and sauces.
Mushrooms
These seem to be a part of every vegan dinner recipe and bring much needed bite to meals.
Nutritional yeast
A source of B vitamins as well as a great flavour enhancer.
Herbs and spices
Play around with different flavours and ensure your meals are always tasty.
Treats
Just because you’re vegan doesn’t mean you have to live like a monk. There are plenty of ordinary snack foods you can have, from Oreos and Starbursts to Doritos and Bournville chocolate.
