Who among us doesn’t love a good egg?
They’re so versatile – you have them warm, have them cold, have them boiled, scrambled, and whisked into an omelette.
The egg is the only food item that will satisfy all of your most intimate food-based desires, and if you disagree with that statement you are pretty much incorrect.
There is one form of egg though that trumps all the other eggs – the poached egg.
Not too hard, not too soft, the poached egg can be cooked just enough to meet the needs of anybody who desires them.
And, as it turns out, a meal of poached eggs is the breakfast that most Irish mams want made for them this Mother’s Day.
A recent survey showed that 71 percent of mams prefer homemade, thoughtful gifts on Mother’s Day, and the gift most of them want the most this year is their breakfast made for them.
Which is lucky for us because we’ve got a load of bread and eggs left over from Storm Emma.
And a bit of avocado too… maybe, so you may as well throw those in too with some tomato and toast and make this a brekkie to remember.
All you’ll need is:
- 2 tomatoes (cut)
- Half tsp rapeseed oil
- 2 eggs
- 1 avocado
- 2 slices of soda bread
- 2 handfuls of spinach
To make your delish egg and avo breakfast, simply do the following:
- Brush the cut sides of the tomatoes with some oil, and then cook them until they are soft and slightly caramelised.
- Poach eggs in a pan of water for 1-2 minutes until the white of the egg is form but the inside is slightly runny.
- Cut and destone the avocado, scoop out the fruit and smash it onto the soda bread.
- Place the eggs on top, grind black pepper over everything and add a handful of spinach and tomatoes to each portion.
