Haven’t had lunch yet? Here’s how to recreate Borough Market’s famous cheese toastie

Amy Nolan

There’s possibly nothing better in this earthly world than the humble cheese toastie.

If you fancy yourself as a bit of a cheese toastie connoisseur, you’ll have heard of Borough Market’s famous cheese toastie. Maybe if you’re really lucky, you’ll even have tasted one.

Yep, you feta believe we’re big cheese fans and happy campers if we’re munching on a toastie at lunchtime. There’s no better food source on a chilly winter’s day.

London’s Borough Market has become a firm favourite for their cheese toasties. YouTuber, Tanya Burr has often uploaded Instagram Stories picking one up and Twitter is full of adulation for them.

The molten creations are whipped up by Kappacasein, a London cheese comapny that has been serving sandwiches since 2000 using a mix of Montgomery cheddar, Ogleshield, Comte cheeses, five types of onions and Poilane sourdough bread for the toasties and Ogleshield cheese.

And now Worcester News has posted an Ed Smith recipe to help you create the perfect toastie. The main tips we picked up from it were to use a combination of two cheeses (“ideally a 50/50 combination of melting and strong”) and butter the external sides of the bread so you get a lovely golden toastie. YUM!
