What we all need to be armed with, we think, are some quick and healthy dinner recipes that will help take the stress out of afternoons. Minimal fuss, maxmimum flavour – it’s a win-win.

1. Mushroom Spaghetti Aglio Olio
Traditional spaghetti Aglio e Olio consists of pasta tossed with olive oil and garlic, but we think it sounds even more delicious with some earthy mushrooms thrown into the mix.

2. Coconut curry noodle soup
Anything Thai-inspired and spicy is perfect for this time a year, and this soup is no execption.  The recipe uses chicken, but you could swap that for anything you like.
