Feel Good Recipe: Mouthwatering Melting Cheese Burgers

Here’s a simple recipe for some delicious melt in the mouth cheese burgers!

Cooking time: 15min

Serves 4

What you’ll need:

6 potatoes, each cut into six wedges
A little sunflower or olive oil
600g lean steak mince
2-3 tbsp freshly chopped thyme
Pinch of chilli flakes
1 medium egg
50g Kerry Low Low cheddar cheese
4 burger buns

To serve:

Mayonnaise, lettuce, sliced tomato, sliced cucumber, sliced red onion and chutney

What to do:

1. Preheat the oven to 200C (180C fan oven) gas mark 6. Put the wedges in a roasting tin, drizzle with a little oil and season well. Roast for 20min.

2. Put the mince in a bowl with the thyme, chilli flakes and egg. Season and mix well with clean hands.

3. Divide the mixture into four. Take one portion and spread flat into a small circle, pat the middle to make a shallow well then put a quarter of the cheese on top. Season, then wrap the beef around and over the cheese to cover. Pat into a round to shape into a burger. Repeat with remaining mince and cheese to make four burgers.

4. After the potato wedges have been cooking for 20min, put the burgers on a lipped baking sheet and cook alongside the wedges for 15-20min until the burgers are cooked all the way through and the wedges are golden.

5. Toast the burger buns, top with lettuce, sliced tomato, cucumber and red onion then the burger. Put the lid on top and enjoy immediately with the wedges, mayo and chutney!
