It’s time to get baking.
On last night’s episode of At My Table, star chef, Nigella Lawson went and created a brand new Christmas sweet treat that we all need ASAP.
Introducing the Merookie. This meringue-cookie hybrid is a mixture of meringue, chocolate-chip cookies, pistachio shavings and edible glitter all rolled into a chewy, crunchy ball.
“At this time of the year, I like to have something sweet in a tin,” she said on last night’s episode as she began making her festive treat.
Explaining the consistency of the Merookies, Nigella said they must be chewy, crisp and chocolatey.

According to #Nigella the half-cookie, half-meringue is called a merookie. That’s good enough for me. #somethingneweveryday #nomnom

Perfect as a snack with tea or coffee after dinner or by yourself in front of the fire (any excuse really).
