Sunday Sweet Treat: Surprise Inside Chocolate Cupcakes

This week's recipe is for Surprise Inside Chocolate Cupcakes

For our ‘Sweet Treat’ feature, we bring you a taste bud-tingling, saliva-inducing recipe every week.

This week, it’s Surprise Inside Chocolate Cupcakes courtesy of Dr. Oetker, made with their brand new Surprise Inside Cupcake Centres.

These provide the perfect filling for your cupcakes and puddings, giving them a gooey centre, and come in a range of flavours.

But that’s enough about them, let’s get baking!

(Makes 10)

Ingredients:

For the cupcakes:

  • 10 Dr. Oetker Muffin Cases
  • 125g (4½ oz) margarine, softened
  • 125g (4½ oz) dark brown sugar, free of lumps
  • 1 tsp Dr. Oetker Natural Vanilla Extract
  • 2 large eggs, beaten
  • 150g (5 oz) plain flour
  • 1 sachet Dr. Oetker Dark Cocoa Powder (25g)
  • 2 tsp Dr. Oetker Baking Powder (2 sachets)
  • 140g pouch Dr. Oetker Surprise Inside Cupcake Centre Rich Chocolate

For decoration:

  • 125g (4½ oz) lightly salted butter, softened
  • 200g (7 oz) icing sugar
  • 1 sachet Dr. Oetker Dark Cocoa Powder (25g)
  • 5ml (1 tsp) Dr. Oetker Natural Vanilla Extract
  • Dr. Oetker Dark Chocolate Chips

 

Method:

1. Preheat the oven to 180°C (160°C fan assisted oven, 350°F, gas mark 4). Line a muffin baking tray with the muffin cases.

2. Put the margarine, sugar and vanilla extract in a bowl and whisk together until creamy and pale. Whisk in the eggs. Sift the flour, cocoa powder and baking powder on top and then gently mix all the ingredients together until well blended.

3. Divide the mixture between the muffin cases. Smooth the tops and bake in the oven for about 20 minutes until risen and just firm to the touch.

4. As soon as the cakes are cooked, generously inject each one with Surprise Inside Chocolate Cupcake Centre, making sure the nozzle goes right to the centre of each cake. Transfer to a wire rack to cool.

5. To decorate, put the butter in a bowl and beat until smooth, glossy and pale. Gradually sift and beat in the icing sugar and cocoa powder until creamy and soft. Mix in the vanilla extract.

6. Spoon the butter icing into a large piping bag with a large closed star nozzle.

7. Starting in the middle of a cake, pipe the icing round in an anti-clockwise direction to cover the top completely.

8. Decorate each cake with chocolate chips. Your cakes are now ready to serve and enjoy!
