Snack Swap: Why Not Swap Your Pasta For This Paleo Alternative?

This week… why not swap your pasta for courgetti?

Ok, we know it’s being tipped as the latest way to cut your carbs, but courgette spaghetti (courgetti) is a great way of boosting your five-a-day while cutting down on carbs.

The no starch, no gluten and no flour pasta will make a perfect replacement for spaghetti, and don’t take hours to make either!

Ingredients:

2 courgettes should serve 4 portions

Method:

  • Cut your courgette into long, thin strips (julienne style).
  • Remove the centre part of the vegetable as it doesn’t hold up well when blanched.
  • Blanche the courgette for 5 – 10 seconds, just until it starts to brighten in colour. Quickly remove and drain it, and immediately served it up topped with your sauce or meat topping.
