This week… why not swap your pasta for courgetti?
Ok, we know it’s being tipped as the latest way to cut your carbs, but courgette spaghetti (courgetti) is a great way of boosting your five-a-day while cutting down on carbs.
The no starch, no gluten and no flour pasta will make a perfect replacement for spaghetti, and don’t take hours to make either!
Ingredients:
2 courgettes should serve 4 portions
Method:
- Cut your courgette into long, thin strips (julienne style).
- Remove the centre part of the vegetable as it doesn’t hold up well when blanched.
- Blanche the courgette for 5 – 10 seconds, just until it starts to brighten in colour. Quickly remove and drain it, and immediately served it up topped with your sauce or meat topping.
