There are 100 new recipes in the book which she's spent the last three years putting together, from breakfasts to desserts. Most of the dishes are handy enough to put together, using ingredients that you'll find in your cupboard.
Aside from releasing her new book, Roz also keeps herself busy by travelling and working out. In recent times she set up The Hike Life Community, where she encourages people to join her on different hikes in different locations around Ireland.
For 2020, The Hike Life is back due to popular demand here in Ireland, and she also plans on bringing them over to the UK for her outdoorsy fans over there.
When I went to visit her at home we cooked (well, I watched) two recipes from No Fuss Vegan: shortbread cookies and a courgette and chickpea soup.
