Weight Watchers Recipe Of The Week: Saffron Seafood Bisque

The best thing about eating healthy is the choice available for some tasty dishes… This week’s recipe is a tasty seafood bisque, with only 4 ProPoints per serving.

Serves 4

4 ProPoints per serving

15 ProPoints  per recipe

10 minutes prep, 20 mins cooking

You can freeze it for a tasty meal another day.

For a special occasion, serve this lovely soup in a large tureen. A 40g(1 ½ oz) piece of baguette per person is ideal on the side for an extra 3 ProPoints values per serving.

Ingredients

A pinch of saffron

Low fat cooking spray

1 onion, chopped

75ml (3 fl oz) dry sherry

400g can chopped tomatoes

400ml (14 fl oz) fish stock

1 fresh rosemary sprig

250g punnet mixed seafood

200g (7 oz) skinless boneless white fish, chopped

1 tablespoon reduced fat double cream

Method

Soak the saffron in 3 tablespoons of warm water for 5 minutes.

Spray a large lidded pan with the cooking spray and heat until hot. Add the onion and stir fry for 10 minutes until beginning to soften, adding a little water if starts to stick.

Add the sherry, letting it bubble up, then add the tomatoes, fish stock and rosemary along with the saffron and it’s soaking water.

Cover and simmer gently for 10 minutes.

Stir in the seafood and fish and simmer gently for 5 minutes until the fish is just cooked. Remove from the heat and stir the cream.

Serve in large bowls.
