We’re stuffing mad here at Her.ie and Christmas is the perfect time to try out new flavours and different ingredients. This time around we’re sharing with you a lovely recipe for chestnut stuffing!
Why not give it a go this festive season?
Ingredients:
- 450g chestnuts, shelled and peeled and chopped
- 6 cups torn white bread pieces
- 2 white onions, chopped finely
- 4 sticks of celery, chopped finely
- 1 tblsp dried sage
- 2 tsp dried thyme
- 1 1/2 tsp dried rosemary
- 1/2 cup finely chopped fresh parsley
- 1/2 cup unsalted butter
Method:
- Preheat your oven 230°C.
- Similar to brussel sprouts, with a sharp knife, cut an “X” into the round side of each chestnut.
- In a flat baking pan, spread the chestnuts in a layer and add a 1/4 of water. Bake for 10 minutes until the chestnut shells open.
- Remove the nuts and peel away the shell while they’re still warm.
- Lower the temperature to 160°C.
- Place your torn white bread pieces in a layer and bake them for about 12-15 minutes or until they’re golden brown. Transfer them to a bowl.
- In a large pan, add a dash of olive oil and cook your celery, onions, all of your dried herbs and butter in a low heat until all the veg have softened.
- Add the chestnuts to the mix and keep stirring for a further minute. Turn off the heat.
- In the bread bowl, add your veg mix to the bread pieces and mix well as you add in the parsley.
- Season to taste and let the stuffing cool.
