Sweet Treat: Semi-Saintly Chocolate Mousse

Chocolate mousse is amazing. Fact. It’s rich, it’s creamy, it’s completely decadent – and it has hardly any calories in it (well, when you compare it to a slice of chocolate cake anyway!).

The best thing about this recipe is that it’s quick, it’s easy and you can whip it up in a few minutes. Chocolate mousse is one of those desserts that looks hard to make, tastes incredible but in reality is oh-so-simple.

If you’re in need of a quick, semi-saintly chocolate fix tonight why not whip of a batch of the following and enjoy?

Ingredients:

75g dark chocolate (go for a standard bar rather than one that has a high cocoa content)

2 eggs

25g of butter

2 tablespoons of golden caster sugar

Method:

Before you begin, take the time to separate your eggs so you’re just left with the egg whites. Then melt your butter and chocolate in a saucepan.

When they’re melted whisk the egg yolks into the chocolate/butter mixture.

In a separate bowl, whisk the egg whites and then whisk in the sugar until the mixture itself is shiny and stiff (i.e. until you can hold it upside down without the mixture falling out). You’ll know that you’re almost done when the mixture starts getting ‘peaky.’

Finally, using a metal spoon, fold the two mixtures (the chocolate/butter/egg yolk mixture and the egg white/sugar mixture) together. Move the spoon in a figure of eight as you mix, this will help to keep everything light, fluffy and smooth.

When you’re happy with it, divide your mousse between four glasses or dessert bowls and pop them in the fridge.

Chill them for about fifteen minutes and then enjoy!
