This week, it’s Malteser Cupcakes courtesy of The Primrose Bakery Book by Martha Swift and Lisa Thomas…
Ingredients:
For the cupcakes:
- 100g unsalted butter. at room temperature
- 120g light brown soft sugar
- 100g caster sugar
- 2 large eggs
- 125g self-raising flour, sifted
- 60g plain flour, sifted
- 50g Ovaltine powder
- 125ml semi-skimmed milk. at room temperature
- ½ teaspoon vanilla extract
- 1 tablespoon sour cream
For the chocolate buttercream frosting:
- 175g good quality dark chocolate
- 225g unsalted butter, at room temperature
- 1 tablespoon semi-skimmed milk
- 1 teapsoon vanilla extract
- 250g icing sugar, sifted
Method:
1. Preheat your oven to 160°C /Gas Mark 4 and line a cupcake tray with cupcake cases.
2. Cream the butter and sugars until pale and smooth. Add the eggs, one at a time, mixing for a few minutes after each addition. Then combine the flours and Ovaltine in a separate bowl and combine the milk, vanilla extract and sour cream in a jug.
3. Add one-third of the flour and Ovaltine mixture to the creamed mixture and beat well. Then pour in one-third of the milk mixture and beat again. Repeat these steps until all of the flour mixture and milk mixture have been added. Mix until well combined.
4. Spoon the mixture into the cupcake cases (two-thirds full). Put them in the oven for 20-25 minutes or until the sponge springs back when pressed gently. Leave the cupcakes to cool in their tin for about 10 minutes before turning them out onto a wire rack to cool completely.
5. To make the chocolate buttercream frosting, melt the chocolate before adding it to the rest of the mixture (icing sugar, unsalted butter, milk and vanilla extract).
6. When the cupcakes are cool, decorate them with the icing and add a few Maltesers to each.
