Summer Dining with SuperValu – Chickpea Summer Salad

Perfect for those warm days when you want a lighter bite

In warm summer evenings, the last thing you want to do is slave over a hot stove. So, a tasty summer salad with some fresh crusty bread is the perfect choice for a simple supper that takes only minutes to make but tastes great! 

We’ve paired up with our friend at SuperValu to share some great recipes for summer, that will please the whole family’s tastebuds and won’t cost a fortune to make! First up is a Kevin Dundon recipe, Chickpea Summer Salad.

Ingredients (Serves 4)

1 tin Chickpeas
1 bunch SuperValu flat leaf parsley roughly chopped
1 bunch SuperValu Fresh Mint Leaves roughly chopped
1 SuperValu Red Onion halved & thinly sliced
1 SuperValu Cucumber finely sliced
1 tbsp SuperValu Extra Virgin Olive Oil
1 tsp Ground Cumin
2 SuperValu Tomatoes chopped
2 cloves SuperValu Garlic
1 SuperValu Lemon zest & juice
1 packets SuperValu Feta Cheese crumbled/cubed
SuperValu Salt & Pepper to season
 

Method:

  1. Place the chickpeas into a sieve and rinse under some cold water.
  2. Place the chickpeas into a bowl and add the vegetables, herbs and cheese.
  3. Season with salt and pepper.
  4. Stir to combine all the ingredients then cover until serving.
