Una Kavanagh

Like them or loath them, you’re almost guarenteed to see these balls of green make an appearance over the Christmas season.

Brussels sprouts might not be a favourite during the festive season but here’s a delicious recipe that could even convert sprout haters! Full of flavour and combined with pistachios, this simple recipe is well worth checking out:

Ingredients:

  • 180g Brussels sprouts
  • 1/2 cup unsalted butter
  • 4 small white onions, chopped
  • 1/4 cup red wine vinegar
  • 2 tblsp fine white sugar
  • 1/2 cup coarsely chopped pistachios
  • salt and white pepper to season

Method:

  1. Steam Brussels sprouts 8-10 minutes or until Brussels sprouts are tender but not soft.
  2. Melt the butter in a deep pan, add in your white onions with 3 tablespoons of your vinegar; cook until onions sautéed and brown.
  3. Add the sprouts, sugar and remaining vinegar and sauté over a medium heat until they’re carmelized.
  4. Season with salt and pepper.
  5. Garnish the finished sprouts with pistachios.
