Sandwiches Galore: Tips on What to Do With Christmas Leftovers

The Christmas feast is over, and you’re stuffed to the brim. But you’ve so much food leftover! What can you do? Even the dog and cat are full.

Instead of chucking it all in the bin or leaving it to go to waste, why not find an alternative way to combine it into meal or add it to your store cupboard? Here are our top suggestions for dealing with leftovers.

The classic turkey sandwich

If the turkey was your meat of choice this year, no doubt you’ve already planned to make the many turkey sandwiches to keep your family happy! This year instead of just the lettuce and mayo, why not add some cranberry, chopped scallions and gerkins to give it more flavour?

Don’t forget to stock up!

Did you have chicken/turkey/lamb this Christmas? Don’t throw the bones out! Now’s the perfect time to make some delicious and nutritious stock, which is a perfect base for your next soup or gravy. And if you’ve no room for big containers, store your stock in an ice cube tray for easy storage in the freezer and handy portion sizes.

Ham, ham and more ham

Too much ham cooked but sick of putting it with potatoes? Try shredding bits of it and adding it into your next pasta dish with some of the leftover vegetables. This great recipe for ham, peas and cream by Nigella Lawson, will have those leftovers scooped up in no time.

Dry up your herbs

Don’t know what to do with your herbs? Why not dry them out to use later on to season meals? You can effectively dry herbs in the oven or out in the open and the flavour can be just as good, if not stronger than fresh.
