RECIPE: Rocky Road Bars

This is super simple but incredibly delicious

It’s time for some Bank Holiday baking!

If you find yourself with some time to kill or fancy a nice treat today, why not try out this recipe for Rocky Road Bars.

Taken from The Hummingbird Bakery Cookbook, this one is guaranteed to satisfy your sweet tooth.

(Makes 12 generous portions)

Ingredients:

  • 1.4kg milk chocolate, roughly chopped
  • 8 regular-sized chewy, filled chocolate bars of your choice (Snickers or Mars), roughly chopped
  • 100g marshmallows
  • 180g Maltesers
  • 100g dried apricots, roughly chopped
  • 100g raisins
  • 100g Cornflakes
  • 100g chocolate vermicelli

 

Method:

1. Put the milk chocolate in a large saucepan over medium heat until melted and smooth, stirring occasionally.

2. Put the chocolate bars, marshmallows, Maltesers, apricots, raisins and Cornflakes in a large bowl and pour in the melted chocolate. Mix with a wooden spoon until everything is well mixed and the dry ingredients are evenly dispersed.

3. Press the mixture into a baking tray (33 x 23 x 5cm tray, lined with greaseproof paper), using a tablespoon to flatten and compress it. Sprinkle the chocolate vermicelli all over the top. Leave to cool completely, then cover and refrigerate overnight.
