RECIPE: How To Make Strawberry Jam Pop Tarts

Want to impress someone with your baking skills this week? Sweet treats have never looked easier to make with these super simple-to-make strawberry pop tarts!

Perfect for when you’re having someone over to tea, we can’t wait to try our hand at making a batch of these old-school treats. The below recipe will make you eight delicious pop tarts. Check out all the details below!

Pastry:

320g Ready-made shortcrust pastry

Filling: Quick Strawberry Jam

  • 200g strawberries, chopped
  • 200g Siucra Sure-Set Jam sugar

Icing:

  • 100g Siucra Icing Sugar
  • 3 teaspoons cold water
  • Sugar strands for decorating

Assembly:

  • 1 egg whisked for assembly & a pastry brush
  • Baking tray lined with baking parchment paper

Method:

  1. For the strawberry jam, put the strawberries into a small pot and mash with a potato masher to break up the fruit. Heat gently for a minute or two.
  2. Add the sugar and stir to dissolve. Bring to the boil and boil for about 10 minutes stirring frequently. Allow to cool before using, then store in a sterilised jam jar and place it in the fridge.
  3. Roll out the pastry into a large rectangle about 25cm x 35cm on a floured surface. Cut into 16 equal size rectangles approx. 6 x 9 cm.
  4. Place a tablespoon full of jam in the centre of half the rectangles and brush around the edges with some beaten egg.
  5. Place another rectangle of pastry on top and seal the edges with a fork. Prick a few holes in the top with a fork.
  6. Place on a baking tray lined with baking parchment paper and bake for 18-22 minutes in the oven until golden.
  7. Remove from the oven and allow to cool before applying the icing.
  8. To make the icing, mix the icing sugar with cold water until it is a spreadable consistency.
  9. Put a spoonful of icing on each pop tart. Spread it out with a spoon and sprinkle some sugar strands to decorate.
