Pastry:
320g Ready-made shortcrust pastry
Filling: Quick Strawberry Jam
- 200g strawberries, chopped
- 200g Siucra Sure-Set Jam sugar
Icing:
- 100g Siucra Icing Sugar
- 3 teaspoons cold water
- Sugar strands for decorating
Assembly:
- 1 egg whisked for assembly & a pastry brush
- Baking tray lined with baking parchment paper
Method:
- For the strawberry jam, put the strawberries into a small pot and mash with a potato masher to break up the fruit. Heat gently for a minute or two.
- Add the sugar and stir to dissolve. Bring to the boil and boil for about 10 minutes stirring frequently. Allow to cool before using, then store in a sterilised jam jar and place it in the fridge.
- Roll out the pastry into a large rectangle about 25cm x 35cm on a floured surface. Cut into 16 equal size rectangles approx. 6 x 9 cm.
- Place a tablespoon full of jam in the centre of half the rectangles and brush around the edges with some beaten egg.
- Place another rectangle of pastry on top and seal the edges with a fork. Prick a few holes in the top with a fork.
- Place on a baking tray lined with baking parchment paper and bake for 18-22 minutes in the oven until golden.
- Remove from the oven and allow to cool before applying the icing.
- To make the icing, mix the icing sugar with cold water until it is a spreadable consistency.
- Put a spoonful of icing on each pop tart. Spread it out with a spoon and sprinkle some sugar strands to decorate.
