Lazy Saturday Brunch: Toasty Banana Bread With Yoghurt

After that much-needed Saturday sleep in what could be better than tucking into a delicious slice of luxurious banana bread?

Teamed with the scrumptious aromas of freshly brewed coffee this has quickly become a weekend favourite of ours.

You can make things easier on yourself by whipping the bread up the night before and warming it up in the oven and best of all it freezes well so making them in batches is always a wonderful idea.

Ingredients

285 grams of plain flour

One teaspoon of bicarbonate of soda

Two large eggs

One teaspoon of salt

120 grams of unsalted butter

90mls of buttermilk

230 grams of caster sugar

Five very ripe bananas

One teaspoon of vanilla extract

Method

Preheat your oven to 180 degrees Celsius.

In a large bowl sift the flour, bicarbonate of soda and salt together.

In a separate bowl cream together your butter and sugar until light and fluffy.

Mix in your eggs one at a time followed by the mashed bananas, buttermilk and vanilla.

Lightly fold your dry ingredients into the batter and thoroughly combine.

Lightly grease a loaf tin before pouring the cake mixture into the tin.

Bake for one hour or until golden and risen.

Remove from the oven and allow to cool slightly before removing from the tin

Cut into generous slices and serve with a dollop of natural yoghurt.
