Earlier this week, the Her.ie girls reviewed Goodall’s Modern Irish Cookbook, which truly celebrates the bustling community of Irish food bloggers.
Although the gem is packed with many delicious recipes, this simple dish from PaulasKitchenTable is definitely one of our favourites!
Ingredients
Tagliatelle with Smoked Trout, Lemon and Peas
Ingredients
500 grams tagliatelle
Rapeseed oil
One garlic clove, chopped
One teaspoon Goodall’s chilli paste
250 ml crème fraîche
Zest and juice of 1 lemon
Handful of frozen peas
100 grams smoked trout
Freshly ground black pepper
Chopped fresh basil, to garnish
Method
Cook the tagliatelle in plenty of boiling salted water according to the instructions on the package.
Meanwhile, heat some oil in a large pan over a low heat and add the garlic and chilli paste. Fry gently for 3 minutes. Add the crème fraîche and stir well. Add in the lemon zest and frozen peas.
Drain the pasta and reserve a little of the cooking water. Add the pasta and the reserved water to the crème fraîche mixture. Take off the heat and stir in the smoked trout and lemon juice. Add a crack of black pepper and a sprinkle of basil and dinner is served!
