Feel Good Recipe: Stuffed Peppers with LowLow

We’ve paired up with our pals at LowLow to bring you a series of recipes that are high on taste, but low on calories. The perfect excuse to get the girls over for a bite to eat and a catch up! First up, some delicious stuffed peppers!

Stuffed Peppers with LowLow
Serves 4

What you’ll need:

125g LowLow Mature Cheddar Spread
4 red peppers (or any colour you prefer!)
2tbsp olive oil
175g mixed long grain and wild rice
4 tomatoes, skinned, quartered and deseeded
4 spring onions, finely chopped
40g black olives, pitted and sliced
2tbsp white wine vinegar
2 garlic cloves, peeled and sliced

What to do:
1. Preheat the oven to 220°C (gas mark 7). Cut the peppers in half lengthways through the stalk and remove the core and seeds. Arrange on a baking sheet, cut-side up, and brush with a little of the oil.
2. Bake for about 15 minutes or until tender. Leave to cool.
3. Meanwhile, cook the rice following the packet instructions. Drain and rinse well with cold water.
4. Roughly chop the tomatoes and mix into the rice with the spring onions and olives.
5. Mix together the remaining olive oil, vinegar, garlic and LowLow Mature Cheddar Spread and season well. Add to the rice mixture.
6. Pile the rice mixture into the pepper halves and arrange on a serving plate.

Tip: for extra zing, try swapping the LowLow Mature Cheddar Spread for LowLow Mature Cheddar Spread with Cracked Black Pepper
