When it’s cold outside there’s nothing better than some simple, delicious comfort food, right? It is always so nice to come home and have a warm, hearty meal that’s full of flavour.
We absolutely love this super simple chicken and broccoli bake. It’s perfect for a midweek dinner when you’re in a hurry to get something on the table and it also works well as a lazy weekend dish.
This recipe will make a bake that’s large enough to serve four people, so it’s perfect if you’re planning any impromptu weekend Come Dine With Me style shenanigans!

Ingredients:
4 chicken breasts that have been chopped up into chunks
1 onion, chopped
450g of broccoli, cut into florets
1 tin of creamy chicken soup
¼ pint of milk
1 teaspoon of curry powder
50g of breadcrumbs
50g of grated cheese
Salt
Pepper
This dish is great for getting some greens into children who turn their noses up at veggies!
Method:
Season the chicken pieces with salt and pepper and set aside.
Heat some olive oil in a frying pan and fry the chopped onion for approximately 1 minute. Then add the chicken pieces to the pan and cook for around 10minutes.
Boil the broccoli for around three minutes while you’re waiting for your chicken pieces to cook through.
Next mix the soup, milk and curry powder together in a jug and set aside for the moment.
Preheat your over to 220C and get an ovenproof dish. Pour the cooked chicken pieces, the onion and the broccoli into the dish. Cover it with the soup mixture and then, cover this with the breadcrumbs and the grated cheese.
Bake the dish for around half an hour, until the cheese and breadcrumbs turn golden brown. Then serve it up with a delicious green salad for the perfect, warming winter dish.
