Those who are in charge of the Christmas meal each year will know the love that the Irish have for their gravy! This recipe for a rich and flavoursome gravy is perfect for those who’re looking to add more depth to their food this Christmas.
Here we’re using chicken and turkeys as our base for flavour, since so many people tuck into these tasty birds during the festive season.
Ingredients:
- 120g of butter
- ¼ cup of flour
- 1 ½ cups of white onion (chopped)
- 1 tsp of Kosher salt
- ½ tsp of white pepper
- 2 cups of chicken stock, combined with turkey drippings
- 1 tblsp of quality brandy
Method:
- In a large pan, melt the butter and tip in your chopped onions.
- Cook over a medium heat until the onions are softened and lightly brown in colour. This should take about 10 – 15 minutes.
- Sprinkle your flour into the pan and whisk it into the mixture, season with salt and pepper.
- Continue cooking for about 3 minutes and then add in your hot stock with turkey, and brandy. Stir until thickened.
- Season to taste.
