We’ve got another great Cook with Avonmore reader recipe for you to try. Her.ie reader Louise is sharing her recipe for Raspberry and White Chocolate cheesecake.
Ingredients
For the biscuit base
· 150g digestive biscuits, crushed
· 75g Avonmore butter, melted
For the cake mixture (filling)
· 400-600g white chocolate, broken into pieces
· Vanilla extract
· 500g cream cheese
· 50g caster sugar
· 180 ml Avonmore whipping cream
· 1 punnet or tin of raspberries
Method
1. Make the base by combining the biscuits and butter and press onto the base of a spring form tin. Place in the fridge while making the filling.
2. In one bowl, melt the white chocolate and some vanilla extract. Allow to cool slightly.
3. In another bowl, mix together the cream cheese, sugar and whipping cream to a smooth consistency.
4. Add the white chocolate and vanilla extract into the second bowl and mix together.
5. Gently stir in the raspberries.
6. Spoon the mixture on top of the biscuit base and place in the fridge to set for a minimum of eight hours.
7. To serve simply remove from the dish and decorate with raspberries or as desired.
