Cook With Avonmore: Pan Fried Hake with Lemon Butter Sauce

Another quick and easy meal in the second of our Tried & Tested: Cook with Avonmore series. Today's meal is a fish dish with a lemony twist - enjoy!

Today we’re talking mains, and we’ve got a quick and easy meal that just so happens to be delicious too…

 

Ingredients

Four Fresh Hake Fillets

Olive Oil

50g Avonmore Butter

30g of chopped herbs (parsley, chives and tarragon)

The juice of half a lemon

Salt and pepper to taste

 

Method

  • Place one tablespoon of olive oil into a large frying pan before gently putting the hake fillets skin side down. Fry on a medium heat. Cook for two minutes before adding knobs of Avonmore butter beside each fillet. Continue cooking until skin is crisp. 
  • When the skin is crisp, turn the hake fillets over and cook for a further three to four minutes. Remove from the heat and place the fish onto a warm plate. 
  • To make the sauce, ad the remaining butter to the frying pan and melt it on a medium heat. Add the herbs to the butter as well as the lemon juice. Spoon over the hake for a delicious supper.
  • This dinner goes well with broccoli and sautéed potatoes. Nom!
