Ingredients (makes 12)

4 slices of streaky bacon

12 fresh Irish oysters

Goodall’s Worcestershire sauce

50 g Irish blue cheese

50 g white breadcrumbs

lemon wedges, to serve

Method

Preheat the oven to 180ºC.

Grill the bacon under a high heat and set aside.

Wash the oysters with a scrubbing brush. To open them, use an oyster knife or a small, thick, pointed (but blunt) knife. Holding the oyster flat side up in a thick cloth to protect your hand, insert the knife at the hinge of the oyster.

Push and twist the knife to break the hinge open. Slide the knife across the inside of the top shell to cut the muscle. Discard the top shell.

Slide your knife under the oyster and cut the bottom muscle to loosen it completely from the shell. Arrange the oysters in their shells on an ovenproof serving plate. Put one drop of Goodall’s Worcestershire sauce on each oyster.

Slice the cooked bacon into thin slivers and put a little over each oyster. Crumble the blue cheese over each one and sprinkle the breadcrumbs on top of them all.

Cook the oysters in the oven for 1 minute and serve them immediately with wedges of lemon.

Serving Suggestion: Enjoy with a nice creamy pint of Irish stout.
