We’re definitely making this Baileys poke cake over the weekend

We're hungry just looking at it.

We love a little glass of Baileys every now and again (and we drank a lot over Christmas), and this cake is taking it to the next level. If you like food blogs, then you'll know that poke cakes are very popular in the bakery scene at the moment. It consists of using the end of a wooden spoon to poke holes in a regular cake, and then drowning it with whatever sauce you prefer.

The sweet sauce drips down and soaks into the cake, and honestly, we can't think of anything more delicious. Well, food website Delish has created a Baileys poke cake, so if you have some leftover Baileys from Christmas, this cake should definitely be on your to-do list this weekend. Here's the recipe:

Ingredients

2 cups granulated sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsps baking powder
1 1/2 tsps baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
1 cup strongly brewed coffee
1 cup Baileys Irish Cream
8 oz cream

Instructions

Preheat your oven to 180C. Line a 9x13 inch baking tray.
In a large bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
Then mix in eggs, milk, vegetable oil, mint extract, and coffee. Stir until the batter is combined.
Pour into the baking dish and bake for 35 minutes.
Let the cake cool for 10 minutes and then poke with about 20 to 30 holes. Pour the Baileys into the holes making sure to get some in each hole.
Let the cake sit overnight. Before serving top with the whipped cream frosting
