3 tasty (and kind of healthy) no-bake cookie recipes to try this weekend

Trine Jensen-Burke

Baking is just one of those activities we often dread because of the mess, but that once we get going we’re always glad we started.

Want a treat but short on time?

These tasty little cookies are not only non-bake, meaning no ovenneeded, but they are also pretty healthy, as far as treats are concerned.

Ready, stready, (no) bake:

1. Dark Chocolate Chunk Oatmeal Cookie Bars

Dates are the key ingredient behind this recipe, which sweetens these cookie bars and binds its other inclusions—like old-fashioned oats, plain quinoa, and dark chocolate—together. Don’t forget to top it all with sea salt, too.

2. Salted Caramel Coconut Macaroons

Shredded coconut, melted caramels, and salted butter combine in this easy recipe, which can make two dozen macaroons when you’re finished. The dipped-chocolate bottoms may be our favorite part since it balances out the sprinkle of sea salt on the top.

3. Chocolate Peanut Butter Pretzel Cookies

If you have 15 minutes to spare in your schedule, then you have enough time to make this recipe. Pretzels, unsweetened cocoa, old-fashioned oats, and peanut butter combine to make a salty-sweet cookie that is too good to resist.
