Rosé Aperol spritz: the summer drink you need to curb these bleary autumn days

So fruity, so delicious.

Summer is over, lads.

It is. It’s done. There is no more canal cans, no more sunny brunches, no more lying around on the grass for hours on end and not even feeling a whisper of a breeze.

Basically, all the fun has been sucked out of our lives and we are unequivocally sad.

The bleary autumn days have brought cold, crisp air, and a painful amount of rain that’s enough to put a literal dampener on even the most delightful of occasions.

That was until we learned about the existence of the rosé Aperol spritz – and suddenly, everything changed.

If there was ever a drink to accurately represent the summer months, it’s Aperol.

Throw some rosé and a few extra fruity bits in there and you’ve got yourself a stunning alcoholic beverage that’ll bring some sun back to even the most depressing of days.

Or at least, it’ll get you drunk.

The guys over at Bon Appétit tried the delicious alcohol beverage recently after asking their senior food editor Rick Martinez to make them a cocktail they’d want to drink all summer.

Thankfully for them – and us, tbh – he whipped up the below.

And in fairness, yeah, you really would be drinking this all summer. And autumn. And winter. And spring.

You get the idea.

The ingredients are as follows:

  • ¾ cup passionfruit juice, chilled
  • ¼ cup Aperol
  • ¼ cup fresh lime juice
  • 4 teaspoons sugar
  • 1 750ml bottle sparkling rosé
  • Grapefruit wedges (for serving)

To make the drink, all you need to is mix the passionfruit juice, Aperol, lime juice, and sugar in a big pitcher until all of the sugar has dissolved.

Add the rosé afterwards, throw a few grapefruit wedges on the sides of some glasses, and serve to all your thirsty mates.

Or just yourself. No judgement, mate.
